Caramelized Onion & Goat Cheese Tartlets

Flaky puff pastry tartlets filled with sweet caramelized onions, creamy goat cheese, and fresh thyme. These elegant bite-sized appetizers are perfect for holidays, brunches, and dinner parties.

Ingredients

  • Puff pastry, thawed
  • Yellow onions, thinly sliced
  • Goat cheese, crumbled
  • Olive oil
  • Butter
  • Brown sugar
  • Balsamic vinegar
  • Fresh thyme
  • Salt
  • Freshly ground black pepper
  • 1 egg, beaten

Instructions

  1. Heat the olive oil and butter in a large skillet over medium-low heat. Add the thinly sliced onions and a pinch of salt.
  2. Cook the onions for 30–40 minutes, stirring occasionally, until soft and deeply golden brown.
  3. Stir in the brown sugar and balsamic vinegar. Cook for another 2–3 minutes, then remove from the heat and allow the onions to cool slightly.
  4. Preheat the oven to 400°F (200°C) and lightly grease a mini muffin pan.
  5. Unfold the thawed puff pastry on a lightly floured surface and gently roll it out. Cut the pastry into small squares large enough to fit into the mini muffin cups.
  6. Gently press each pastry square into a muffin cup, leaving the corners slightly above the edges.
  7. Add a small amount of caramelized onion to each pastry cup and crumble goat cheese over the onions. Avoid overfilling the tartlets.
  8. Sprinkle each tartlet with fresh thyme and freshly ground black pepper.
  9. Lightly brush the exposed puff pastry with beaten egg.
  10. Bake for 15–20 minutes, or until the pastry is puffed and golden and the goat cheese is warm.
  11. Let the tartlets cool in the pan for about 5 minutes before carefully removing them. Garnish with additional fresh thyme and serve warm or at room temperature.

Notes

  • For a sweet finish, drizzle the baked tartlets with honey or hot honey.
  • Add finely chopped walnuts or pecans for extra crunch.
  • Thin slices of pear or apple can be placed beneath the onions for a sweet-and-savory variation.
  • Brie, feta, Gruyère, cream cheese, or ricotta can be substituted for the goat cheese.
  • Fresh rosemary can replace thyme, and roasted garlic can be added to the caramelized onions for extra savory flavor.
  • Let the onions cool and make sure excess liquid has evaporated before filling the pastry to help prevent soggy tartlets.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat at 350°F (175°C) for 5–10 minutes or briefly in an air fryer.
  • The caramelized onions can be prepared up to 4 days ahead and refrigerated. Assemble and bake the tartlets closer to serving time for the crispiest pastry.
