This Caramelized Onion Chutney is a rich, sweet, and tangy condiment made with slow-cooked onions, balsamic vinegar, and warm spices. It’s a versatile addition to cheese boards, sandwiches, burgers, roasted vegetables, and grilled meats.

Ingredients

  • 2 tablespoons olive oil
  • 4 large yellow onions, thinly sliced
  • 2 garlic cloves, minced
  • 1/2 cup brown sugar
  • 1/3 cup balsamic vinegar
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon ground cinnamon
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Heat the olive oil in a large skillet or saucepan over medium-low heat.
  2. Add the sliced onions and cook slowly, stirring occasionally, for 30 to 40 minutes until soft, golden, and deeply caramelized.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Add the brown sugar, balsamic vinegar, apple cider vinegar, Dijon mustard, dried thyme, cinnamon, salt, and black pepper.
  5. Stir well and bring the mixture to a gentle simmer.
  6. Cook for 15 to 20 minutes, stirring occasionally, until the liquid reduces and the chutney becomes thick and glossy.
  7. Remove from the heat and let the chutney cool completely.
  8. Transfer the cooled chutney to a clean glass jar or airtight container and refrigerate before serving.
