Caramelized Onion Burgers with Swiss Cheese and Arugula

Juicy beef burgers topped with nutty melted Swiss cheese, sweet caramelized onions, and fresh peppery arugula. Toasted buns with Dijon and mayonnaise bring these rich, savory burgers together.

Ingredients

  • Ground beef
  • Yellow onions, thinly sliced
  • Swiss cheese slices
  • Fresh arugula
  • Burger buns
  • Butter
  • Olive oil
  • Balsamic vinegar
  • Salt
  • Freshly ground black pepper
  • Dijon mustard
  • Mayonnaise

Instructions

  1. Heat the butter and olive oil in a large skillet over medium-low heat.
  2. Add the sliced onions and a pinch of salt. Cook for 30–40 minutes, stirring occasionally, until very soft and deeply golden brown.
  3. During the final few minutes of cooking, add a small splash of balsamic vinegar. Continue cooking until most of the liquid has evaporated, then remove the onions from the heat and set aside.
  4. Divide the ground beef into 4 equal portions and gently form each portion into a patty slightly wider than the burger buns. Avoid packing the beef too tightly.
  5. Just before cooking, season both sides of each patty generously with salt and black pepper.
  6. Heat a heavy skillet, grill pan, or outdoor grill over medium-high heat. Cook the patties until they reach your preferred doneness and a food-safe internal temperature.
  7. During the final 1–2 minutes of cooking, place a slice of Swiss cheese over each patty and allow it to melt.
  8. Lightly toast the burger buns until the cut sides are golden.
  9. Spread mayonnaise and Dijon mustard over the toasted buns.
  10. Place a Swiss cheese-topped burger patty onto each bottom bun.
  11. Spoon a generous portion of warm caramelized onions over each patty and top with fresh arugula.
  12. Add the top buns and serve immediately while the burgers and onions are hot.

Notes

  • Ground beef with around 20% fat produces especially juicy and flavorful burger patties.
  • Add sautéed cremini mushrooms for a mushroom and Swiss variation.
  • Gruyère, sharp cheddar, smoked Gouda, blue cheese, provolone, or fontina can replace the Swiss cheese.
  • For sweeter onions, add a small amount of brown sugar while caramelizing them.
  • Red wine or Worcestershire sauce can be used instead of balsamic vinegar for a different savory flavor.
  • Add sliced jalapeños, spicy mustard, crushed red pepper, or hot sauce for extra heat.
  • Brioche buns, pretzel buns, or toasted ciabatta rolls can replace standard burger buns.
  • Caramelized onions can be prepared up to 4 days ahead and refrigerated in an airtight container.
  • Store cooked patties and caramelized onions separately in the refrigerator for up to 3–4 days. Reheat gently and add the fresh arugula only when assembling the burgers.
