Ingredients
4 medium Belgian endive heads
4 clementines, divided
1 tablespoon olive oil
1 tablespoon unsalted butter, optional
2 teaspoons honey or brown sugar
1/3 cup toasted walnuts or pecans, roughly chopped
2 cups fresh arugula or mixed greens, optional
1/3 cup crumbled goat cheese or feta, optional
1/4 teaspoon flaky sea salt
1/8 teaspoon freshly ground black pepper
3 tablespoons fresh clementine juice
3 tablespoons extra-virgin olive oil
1 teaspoon Dijon mustard
1 teaspoon honey
1 tablespoon apple cider vinegar or white wine vinegar
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions
Trim the bases of the endive and slice each head lengthwise into halves. Quarter larger heads if necessary.
Peel 3 clementines and separate them into segments. Juice the remaining clementine to obtain about 3 tablespoons juice.
Whisk together the clementine juice, extra-virgin olive oil, Dijon mustard, 1 teaspoon honey, vinegar, 1/4 teaspoon salt, and 1/8 teaspoon black pepper until emulsified. Set aside.
Heat 1 tablespoon olive oil and the optional butter in a large skillet over medium heat.
Arrange the endive cut-side down in a single layer. Cook undisturbed for 3–4 minutes until deeply golden.
Turn the endive and cook for another 2–3 minutes until slightly tender.
Drizzle 2 teaspoons honey over the endive or sprinkle with brown sugar. Cook for another 1–2 minutes, turning as needed, until glossy and caramelized.
Remove from the heat and season lightly with flaky sea salt and black pepper.
Arrange the optional arugula or mixed greens on a serving platter. Top with the warm caramelized endive, clementine segments, toasted nuts, and optional goat cheese or feta.
Drizzle with the clementine dressing and serve immediately.
Notes
Choose firm Belgian endive with tightly packed leaves and pale yellow tips.
Do not overcrowd the skillet; cook the endive in batches if necessary to encourage browning rather than steaming.
Walnuts can be replaced with pecans, pistachios, almonds, or hazelnuts.
For a heartier salad, add 1–2 cups cooked farro, quinoa, or lentils.
Thinly sliced pear, apple, pomegranate seeds, blood orange, or grapefruit can be added for extra fruit flavor.
For make-ahead preparation, refrigerate the endive, fruit, nuts, greens, and dressing separately and assemble shortly before serving.
Store assembled leftovers in an airtight container in the refrigerator for up to 1–2 days.
