Caramel Banana Cream Pie layers a crisp pie crust with fresh bananas, silky vanilla custard, buttery caramel, and fluffy whipped cream. Served well chilled, it is a rich and creamy twist on classic banana cream pie.

Ingredients

  • 1 9-inch baked pie crust, completely cooled
  • 3–4 ripe but firm bananas
  • 1/2 cup caramel sauce, plus more for serving
  • 2 1/2 cups whole milk
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 4 large egg yolks
  • 2 tablespoons unsalted butter
  • 2 teaspoons vanilla extract
  • 1 1/2 cups heavy whipping cream, cold
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract, for the whipped cream
  • Caramel sauce, for garnish
  • Banana slices, for garnish
  • Chocolate shavings, optional
  • Chopped toasted pecans, optional

Instructions

  1. Begin with a completely baked and cooled 9-inch pie crust.
  2. To make the vanilla cream filling, warm the whole milk in a medium saucepan over medium heat until steaming but not boiling.
  3. In a separate bowl, whisk together the granulated sugar, cornstarch, salt, and egg yolks until smooth.
  4. Slowly pour some of the warm milk into the egg mixture while whisking continuously to temper the yolks.
  5. Pour the tempered egg mixture back into the saucepan with the remaining milk. Cook over medium heat, whisking constantly, until the custard thickens and begins to bubble.
  6. Continue cooking briefly while whisking, then remove from the heat. Stir in the butter and 2 teaspoons vanilla extract until smooth.
  7. Transfer the custard to a bowl and press plastic wrap directly against its surface. Let it cool, then refrigerate until thoroughly chilled.
  8. To assemble the pie, spread a thin layer of caramel sauce over the bottom of the cooled crust.
  9. Slice the bananas and arrange a generous layer over the caramel. Spoon some of the chilled vanilla custard over the bananas and spread evenly.
  10. Add another layer of banana slices, drizzle lightly with caramel, and cover with the remaining custard. Smooth the surface.
  11. Cover and refrigerate the assembled pie for at least 4 hours, or overnight for a firmer filling.
  12. Before serving, beat the cold heavy whipping cream, powdered sugar, and 1 teaspoon vanilla extract until medium to stiff peaks form.
  13. Spoon or pipe the whipped cream over the chilled pie.
  14. Finish with additional caramel sauce and optional fresh banana slices, chocolate shavings, or toasted pecans before serving.

Notes

  • Use ripe but firm yellow bananas so they are sweet while still holding their shape in the filling.
  • For a salted caramel variation, use salted caramel sauce or add a small sprinkle of flaky sea salt.
  • Toasted pecans or walnuts can be layered with the bananas for additional crunch.
  • For a chocolate-caramel version, spread a thin layer of melted chocolate over the cooled crust and let it set before adding the caramel and bananas.
  • A graham cracker or vanilla wafer crust can replace the traditional pastry crust.
  • For stronger caramel flavor, gently swirl a few spoonfuls of caramel through the vanilla custard.
  • Keep decorative banana slices fresh by adding them shortly before serving.
  • Store the pie covered in the refrigerator and enjoy within 2–3 days.
  • Do not reheat the pie; serve it chilled or let individual slices stand at room temperature for a few minutes.
  • Freezing the assembled pie is not recommended because the custard can separate and the bananas can become watery after thawing.
