This Caprese Croissant Breakfast Sandwich combines buttery, flaky croissants with creamy fresh mozzarella, juicy tomatoes, fragrant basil, and perfectly cooked eggs. It’s a fresh and satisfying breakfast or brunch that’s easy to make and full of classic Caprese flavor.

Ingredients

  • 4 large croissants, sliced in half
  • 4 large eggs
  • 8 ounces fresh mozzarella, sliced
  • 2 medium tomatoes, sliced
  • Fresh basil leaves
  • 2 tablespoons butter
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons basil pesto (optional)
  • Balsamic glaze, for drizzling (optional)

Instructions

  1. Slice the croissants in half horizontally.
  2. Melt the butter in a nonstick skillet over medium heat.
  3. Cook the eggs to your preferred style, such as fried, scrambled, or folded, and season with salt and black pepper.
  4. Lightly toast the croissant halves until warm and slightly crisp.
  5. Spread basil pesto on the inside of the croissants if using.
  6. Layer the fresh mozzarella slices on the bottom half of each croissant.
  7. Place the cooked egg on top of the mozzarella.
  8. Add the tomato slices and fresh basil leaves.
  9. Drizzle with balsamic glaze if desired.
  10. Top with the remaining croissant halves and serve immediately.

Notes

  • Fresh mozzarella provides the best creamy texture and flavor.
  • Add crispy bacon, turkey, avocado, spinach, arugula, or roasted red peppers for tasty variations.
  • Burrata or provolone can be substituted for the mozzarella.
  • Assemble the sandwiches just before serving to keep the croissants flaky.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
  • Reheat in a 325°F (165°C) oven or air fryer for 4–6 minutes until warmed through and crisp.
