Caprese Chicken is a fresh and flavorful dish featuring juicy chicken breasts topped with ripe tomatoes, creamy fresh mozzarella, fragrant basil, and a drizzle of balsamic glaze. It’s an elegant yet easy meal that’s perfect for weeknight dinners or special occasions.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large tomatoes, sliced
  • 8 ounces fresh mozzarella, sliced
  • Fresh basil leaves
  • 2 tablespoons balsamic glaze
  • 2 tablespoons grated Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Lightly grease a baking dish or oven-safe skillet with a little olive oil.
  3. Season the chicken breasts with the salt, black pepper, and Italian seasoning.
  4. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  5. Sear the chicken for 3 to 4 minutes per side until lightly golden.
  6. Add the minced garlic and cook for about 30 seconds until fragrant.
  7. Top each chicken breast with tomato slices, then fresh mozzarella slices.
  8. Transfer the skillet to the oven and bake for 15 to 20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  9. Let the chicken rest for 5 minutes.
  10. Top with fresh basil, drizzle with balsamic glaze, and sprinkle with Parmesan cheese if desired before serving.
