Cappuccino Cupcakes are soft, fluffy coffee-flavored cupcakes infused with espresso and vanilla, then topped with creamy espresso frosting. A light dusting of cocoa powder gives each cupcake a classic café-inspired finish.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons instant espresso powder
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 1/4 cup strong brewed espresso or coffee, cooled
  • 1 cup unsalted butter, softened, for the frosting
  • 3 cups powdered sugar
  • 1 tablespoon instant espresso powder, for the frosting
  • 12 tablespoons hot water
  • 1 teaspoon vanilla extract, for the frosting
  • 23 tablespoons heavy cream or milk
  • Pinch of salt, for the frosting
  • Unsweetened cocoa powder, for decorating
  • Chocolate shavings, optional
  • Chocolate-covered espresso beans, optional

Instructions

  1. Preheat the oven to 350°F (175°C) and line a standard 12-cup muffin pan with cupcake liners.
  2. Whisk together the flour, baking powder, salt, and 2 tablespoons espresso powder in a medium bowl. Set aside.
  3. Beat the softened butter, granulated sugar, and brown sugar in a large mixing bowl for 2–3 minutes until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Mix in the vanilla extract.
  5. Combine the whole milk and cooled brewed espresso in a separate container.
  6. Add approximately one-third of the dry ingredients to the butter mixture, followed by half of the milk mixture. Continue alternating the dry and wet ingredients until incorporated, mixing only until the batter comes together.
  7. Divide the batter evenly among the 12 cupcake liners, filling each approximately two-thirds full.
  8. Bake for 18–22 minutes, until the tops spring back lightly and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Cool the cupcakes in the pan for about 5 minutes, then transfer them to a wire rack and cool completely for 30–45 minutes before frosting.
  10. For the frosting, dissolve 1 tablespoon instant espresso powder in 1 tablespoon hot water and let it cool.
  11. Beat 1 cup softened butter until smooth and creamy. Gradually beat in the powdered sugar.
  12. Add the dissolved espresso, vanilla extract, pinch of salt, and enough heavy cream or milk to create a smooth, fluffy frosting. Add additional dissolved espresso if a stronger coffee flavor is desired.
  13. Pipe or spread the espresso frosting over the completely cooled cupcakes.
  14. Lightly dust each cupcake with unsweetened cocoa powder. Garnish with optional chocolate shavings or chocolate-covered espresso beans and serve.

Notes

  • Use room-temperature butter and eggs to help the cupcake batter combine smoothly.
  • Avoid overmixing the batter after adding the flour to keep the cupcakes soft and tender.
  • For mocha cupcakes, replace about 1/4 cup of the flour with 1/4 cup unsweetened cocoa powder and optionally add chocolate chips.
  • For a milder vanilla cappuccino flavor, reduce the espresso powder slightly and increase the vanilla extract.
  • Drizzle caramel sauce over the frosting for caramel cappuccino cupcakes.
  • Vanilla buttercream can replace the espresso frosting for a milder café-style topping.
  • For mini cupcakes, use a mini muffin pan and begin checking for doneness considerably earlier.
  • Store frosted cupcakes in an airtight container at cool room temperature for 1–2 days or refrigerate for up to 4 days. Bring refrigerated cupcakes closer to room temperature before serving.
  • Unfrosted cupcakes can be frozen in an airtight freezer-safe container for up to 2–3 months. Thaw completely before frosting.
