Ingredients

  • 6 eggs
  • 1 lb breakfast sausage or bacon
  • 4 medium potatoes, diced
  • 1/2 onion, diced
  • 1 bell pepper, diced
  • 1 cup shredded cheddar cheese
  • 2 tbsp butter or oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional toppings: green onions, salsa, avocado, hot sauce, fresh parsley

Instructions

  1. Heat a large cast iron skillet over a campfire grate or grill.
  2. Add the sausage or bacon and cook until browned and fully cooked. Remove and set aside if needed.
  3. Add butter or oil to the skillet and cook the diced potatoes until golden brown and tender.
  4. Stir in the onions and bell peppers and cook until softened.
  5. Return the cooked meat to the skillet and stir everything together.
  6. Create small spaces in the mixture and crack the eggs directly into the skillet.
  7. Cover the skillet loosely with foil or a lid and cook until the eggs reach your desired doneness.
  8. Sprinkle shredded cheddar cheese over the top and let it melt.
  9. Garnish with optional toppings and serve hot directly from the skillet.
