Ingredients
boneless chicken breasts or thighs
buttermilk
all-purpose flour
cornstarch
eggs
salt
black pepper
paprika
garlic powder
onion powder
cayenne pepper
burger buns
lettuce
tomato slices
pickles
mayonnaise
oil for frying
Instructions
Marinate the chicken in buttermilk with salt and spices. Cover and refrigerate for at least 2 hours or overnight.
In one bowl, mix flour, cornstarch, and seasonings. In another bowl, beat the eggs.
Remove chicken from marinade, letting excess drip off. Dredge in flour mixture, dip in egg, then coat again in flour mixture.
Heat oil to 350°F (175°C) in a deep pan or fryer.
Fry the chicken for 6–8 minutes per piece until golden brown and cooked through.
Remove and drain on paper towels or a wire rack.
Lightly toast the burger buns.
Spread mayonnaise on buns and layer with lettuce, tomato, pickles, and fried chicken.
Assemble the sandwich and serve hot.
Notes
For extra spice, increase cayenne or add hot sauce.
Air fry for a lighter option, though texture will differ.
Use brioche buns for a richer flavor.
Double-coat the chicken and add more cornstarch for extra crunch.
Store chicken separately and reheat in oven or air fryer to maintain crispiness.
