Buttered Noodles are a simple, comforting pasta dish made with tender noodles coated in rich butter and finished with Parmesan, herbs, and seasonings. They are quick to prepare and perfect as an easy meal or a versatile side dish.

Ingredients

  • Egg noodles or pasta of choice
  • Unsalted butter
  • Garlic, minced (optional)
  • Grated Parmesan cheese
  • Fresh parsley, chopped
  • Salt
  • Black pepper
  • Italian seasoning (optional)
  • Red pepper flakes (optional)

Instructions

  1. Bring a large pot of salted water to a boil and cook the noodles according to the package directions until tender.
  2. Reserve a small amount of the pasta cooking water, then drain the noodles.
  3. Melt the butter in the same pot or a large skillet over medium-low heat.
  4. Add the garlic, if using, and cook briefly until fragrant.
  5. Return the cooked noodles to the pot and toss gently with the melted butter.
  6. Add a splash of the reserved pasta water if needed to create a silky coating.
  7. Stir in the Parmesan cheese, parsley, salt, black pepper, and any optional seasonings.
  8. Toss until the noodles are evenly coated.
  9. Serve immediately with extra Parmesan and fresh parsley if desired.

Notes

  • Egg noodles are traditional, but spaghetti, fettuccine, linguine, or other pasta shapes work well.
  • Add sautéed mushrooms, spinach, or peas for extra vegetables.
  • Mix in grilled chicken, shrimp, or shredded rotisserie chicken for added protein.
  • For a richer dish, stir in a splash of heavy cream or a spoonful of cream cheese.
  • Fresh basil, thyme, chives, or lemon zest add extra flavor.
  • Store leftovers in the refrigerator for up to 4 days or freeze for up to 2 months.
  • Reheat with a splash of water or broth and a little extra butter to restore the creamy texture.
