Butter Pepper Carrots are a simple and flavorful side dish featuring tender carrots coated in rich butter and seasoned with freshly cracked black pepper. This quick and comforting recipe highlights the natural sweetness of carrots with savory buttery flavor and gentle spice.

Ingredients

  • 1 lb carrots, peeled and sliced
  • 3 tbsp butter
  • 1 tsp freshly cracked black pepper
  • 1/2 tsp salt
  • 2 tbsp chopped parsley (optional)
  • 1 clove garlic, minced (optional)
  • 1 tbsp honey (optional)
  • 1 tsp fresh thyme (optional)
  • 1/2 tsp lemon zest (optional)

Instructions

  1. Peel and slice the carrots into even pieces.
  2. Bring a pot of salted water to a boil.
  3. Add the carrots and cook until tender but still slightly firm, about 8 to 10 minutes.
  4. Drain the carrots well.
  5. In a large skillet, melt the butter over medium heat.
  6. Add the cooked carrots and toss to coat evenly.
  7. Season with black pepper and salt.
  8. Cook for 3 to 5 minutes, stirring occasionally, until the carrots are glossy and lightly caramelized.
  9. Add optional garlic, herbs, honey, or lemon zest if desired.
  10. Serve warm.

Notes

  • Regular carrots, baby carrots, or rainbow carrots all work well.
  • Roasting the carrots instead of boiling adds deeper caramelized flavor.
  • Add honey or maple syrup for a sweeter glaze.
  • Fresh parsley, thyme, rosemary, or dill pair beautifully with this dish.
  • Use dairy-free butter for a dairy-free variation.
  • Store leftovers in the refrigerator for up to 4 days.
  • Reheat gently in a skillet or microwave before serving.
