Ingredients

  • 1/4 tsp black pepper
  • 1/2 cup giardiniera, chopped
  • 2 tbsp chopped parsley
  • 1/4 tsp red pepper flakes
  • 1/4 cup crumbled feta cheese (optional)

  • 1 tsp chili oil (optional)
  • 1/4 cup sliced olives (optional)
  • 2 tbsp toasted pine nuts (optional)

Instructions

  1. Drain and rinse the butter beans thoroughly.
  2. Add the butter beans, olive oil, garlic, lemon juice, tahini or cream cheese, salt, and black pepper to a food processor.
  3. Blend until smooth and creamy.
  4. Add a little water or extra olive oil if needed for a smoother texture.
  5. Spread the dip onto a serving plate or shallow bowl.
  6. Spoon the chopped giardiniera evenly over the top.
  7. Garnish with parsley, red pepper flakes, or optional toppings.
