Burrata bruschetta is an elegant twist on the classic Italian appetizer, featuring creamy burrata cheese paired with fresh tomatoes, basil, and a balsamic glaze on toasted crusty bread. It’s perfect as a starter, snack, or light meal.

Ingredients

  1. 1 loaf of baguette or crusty Italian bread, sliced
    2 tablespoons olive oil (for brushing the bread)
    2 cups cherry tomatoes, halved (or diced large tomatoes)
    1 tablespoon fresh basil, chopped (plus extra for garnish)
    1 tablespoon red onion, finely chopped (optional)
    1 tablespoon extra virgin olive oil (for the tomato mixture)
    1 teaspoon balsamic vinegar (optional, for added tang)
    Salt and pepper, to taste
    2 balls of burrata cheese (about 4 oz each)
    Balsamic glaze, for drizzling (optional)

Instructions

Preheat your oven to 375°F (190°C). Arrange the sliced baguette or crusty bread on a baking sheet. Brush each slice with olive oil and toast them in the oven for 8-10 minutes or until golden brown and crispy.

  1. Combine the halved cherry tomatoes, chopped basil, and red onion (if using) in a bowl. Drizzle with 1 tablespoon of olive oil and balsamic vinegar (if using). Season with salt and pepper to taste. Toss gently and set aside.
  2. Once the bread slices are toasted, remove them from the oven and let them cool slightly. Tear or cut the burrata balls in half and place a piece on each slice of toast.
  3. Spoon the tomato-basil mixture onto each piece of bread with burrata. The tomatoes should be generous, and their juices will mix with the creamy cheese.
  4. Drizzle the bruschetta with balsamic glaze (optional) for added sweetness and flavor. Garnish with extra basil leaves and serve immediately while the bread is still warm and crispy.

Notes

  • Optional: Add prosciutto on top of the burrata for an extra savory touch.
  • Roasted vegetables like bell peppers or zucchini can be added to the tomato mixture for a heartier version.
  • If you don’t have burrata, fresh mozzarella or ricotta can be substituted.
