Ingredients

  • Whole-milk ricotta
  • Cream cheese
  • Granulated sugar
  • Eggs
  • Heavy cream
  • Fresh orange zest
  • Fresh orange juice
  • Vanilla extract
  • All-purpose flour or cornstarch
  • Pinch of salt
  • Orange slices, optional
  • Extra granulated sugar, for caramelizing

Instructions

  1. Preheat the oven to 425°F (220°C) and line a springform pan with parchment paper, allowing the paper to extend above the sides.
  2. Drain the ricotta thoroughly if it contains excess liquid.
  3. Place the ricotta and cream cheese in a large bowl and beat until smooth and creamy.
  4. Add the granulated sugar and mix until evenly incorporated.
  5. Add the eggs one at a time, mixing gently after each addition.
  6. Pour in the heavy cream, then add the orange zest, orange juice, vanilla extract, and salt.
  7. Sift in the flour or cornstarch and gently mix until the filling is smooth and combined.
  8. Pour the cheesecake mixture into the prepared pan and smooth the surface.
  9. Bake for 45–55 minutes, until the top is deeply browned and caramelized and the center still has a noticeable wobble.
  10. Remove from the oven and cool completely in the pan, then refrigerate for at least 4 hours, preferably overnight.
  11. For an optional burnt-orange topping, arrange thin orange slices over the chilled cheesecake, sprinkle lightly with sugar, and carefully caramelize with a kitchen torch.
  12. Allow the caramelized topping to cool briefly before slicing and serving.

  • Use well-drained whole-milk ricotta to prevent excess moisture from making the filling watery.
  • Fresh orange zest provides a more concentrated citrus aroma than orange juice alone.
