1/3 cup honey
1 vanilla bean, split and scraped
2 tablespoons granulated sugar (optional)

Instructions
Sprinkle the gelatin over the cold water and let it bloom for 5 to 10 minutes.
Heat the honey in a saucepan over medium heat until it darkens to a deep amber color, stirring occasionally and watching carefully to avoid over-burning.
Slowly whisk in the heavy cream and whole milk, taking care as the mixture will bubble vigorously.
Add the vanilla bean seeds, scraped vanilla pod, a pinch of salt, and granulated sugar if using.
Heat the mixture gently until steaming but not boiling.
Remove the vanilla pod and stir in the bloomed gelatin until completely dissolved.
Strain the mixture through a fine-mesh sieve for a perfectly smooth texture.
Divide the mixture evenly among serving glasses or ramekins.
Refrigerate for 4 to 6 hours, or until fully set.
