Bunny Pancakes Recipe

Fluffy homemade pancakes arranged into an adorable bunny shape and decorated with fresh fruit, chocolate chips, and a whipped cream tail. These playful pancakes are perfect for Easter breakfast, spring brunch, birthdays, or a fun family breakfast.

Ingredients

  • 2 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • 1 ¾ cups milk
  • ¼ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Butter or nonstick cooking spray for the griddle
  • Banana slices for decorating
  • Fresh strawberries for decorating
  • Fresh blueberries for decorating
  • Mini chocolate chips for decorating
  • Whipped cream for the bunny tail
  • Maple syrup for serving

Instructions

  1. Whisk the flour, sugar, baking powder, baking soda, and salt together in a large mixing bowl.
  2. In a separate bowl, whisk the eggs, milk, melted butter, and vanilla until well combined.
  3. Pour the wet ingredients into the dry ingredients and gently stir just until combined. A few small lumps are fine; avoid overmixing.
  4. Preheat a large nonstick skillet or griddle over medium heat and lightly grease it with butter or nonstick cooking spray.
  5. For each bunny, cook one larger round pancake for the body and one smaller round pancake for the head.
  6. Make two small oval pancakes for the feet and two longer, narrow pancakes for the ears.
  7. Cook each pancake for about 2 to 3 minutes, until bubbles appear on the surface and the edges begin to set.
  8. Flip and cook for another 1 to 2 minutes, or until golden and cooked through.
  9. To assemble a bunny viewed from behind, place the smaller head pancake near the top of a plate and slightly overlap it with the larger body pancake.
  10. Position the two long pancakes above the head as ears and place the oval pancakes near the bottom of the body as feet.
  11. Add a swirl of whipped cream in the center of the body to create a fluffy bunny tail.
  12. Decorate the feet and bunny with banana slices, strawberries, blueberries, or mini chocolate chips.
  13. Serve immediately with maple syrup and additional fresh fruit.

Notes

  • A large griddle allows several pancake shapes to cook simultaneously and reduces the overall cooking time.
  • Avoid overmixing the batter to help keep the pancakes light and fluffy.
  • For chocolate bunny pancakes, add mini chocolate chips to the batter or replace a small portion of the flour with unsweetened cocoa powder.
