Buffalo Chicken Subs are a delicious blend of spicy buffalo chicken, melted cheese, and crispy toasted buns, making for a satisfying and easy meal perfect for game days, casual dinners, or hearty lunches.

Ingredients

  1. 3 cups cooked chicken, shredded or cubed
    1/2 cup buffalo sauce (store-bought or homemade)
    1/4 cup ranch or blue cheese dressing (optional, for drizzling)
    4 sub rolls or hoagie buns
    1 1/2 cups shredded mozzarella cheese
    1 tablespoon olive oil (optional, for toasting the buns)
    Fresh parsley, chopped (for garnish)

Instructions

If you haven’t already, cook the chicken (grilled, roasted, or shredded rotisserie chicken works well). Shred or cube the chicken into bite-sized pieces.

  1. In a large bowl, toss the shredded chicken with buffalo sauce until evenly coated.
  2. Preheat your oven to 375°F (190°C). If you’d like a toasted sub, drizzle the inside of each sub roll with a little olive oil and place them in the oven for 3-5 minutes until slightly crispy.
  3. Once the buns are toasted, evenly distribute the buffalo chicken mixture between the sub rolls. Top with shredded mozzarella cheese.
  4. Place the assembled subs on a baking sheet and bake for 8-10 minutes, or until the cheese is melted and bubbly.
  5. Remove from the oven, drizzle with ranch or blue cheese dressing (if desired), and garnish with chopped fresh parsley.

Notes

  • For a spicier version, add extra hot sauce or cayenne pepper to the chicken mixture.
  • For a different cheese, try cheddar, pepper jack, or blue cheese.
  • If you prefer a vegetarian option, use battered and baked cauliflower florets instead of chicken.
  • For added crunch, top with sliced celery, carrots, or onions.
  • Store leftover buffalo chicken in an airtight container in the refrigerator for up to 3 days.
  • Reheat the chicken mixture by baking at 350°F (175°C) for 10 minutes or microwaving before assembling the subs.
