Ingredients

  • 12 ounces penne, rotini, rigatoni, or cavatappi pasta
  • 2 cups cooked shredded chicken
  • 2 tablespoons butter
  • 2 garlic cloves, minced
  • 1/2 cup Buffalo wing sauce
  • 1 cup heavy cream
  • 4 ounces cream cheese, softened
  • 1/2 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon ranch seasoning or 1/4 cup blue cheese crumbles (optional)
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • 2 green onions, sliced
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Cook the pasta according to the package directions until al dente. Drain and set aside.
  2. Melt the butter in a large skillet over medium heat and sauté the garlic until fragrant, about 1 minute.
  3. Stir in the Buffalo wing sauce, chicken broth, heavy cream, and cream cheese. Cook until the sauce is smooth.
  4. Add the cheddar, mozzarella, and Parmesan cheeses, stirring until fully melted and creamy.
  5. Mix in the shredded chicken and cook until heated through.
  6. Fold the cooked pasta into the sauce until evenly coated.
  7. Season with black pepper and add salt only if needed.
  8. Garnish with sliced green onions, chopped parsley, and blue cheese crumbles or ranch seasoning if desired.
  9. Serve immediately while hot and creamy.

Notes

  • Rotisserie chicken works well for a quick and easy version.
  • Add crispy bacon for extra smoky flavor.
  • Stir in broccoli or spinach for additional vegetables.
  • Use pepper Jack cheese for a spicier twist.
  • Top with toasted breadcrumbs or crushed tortilla chips for added crunch.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Freeze for up to 2 months, though the sauce may change slightly in texture after thawing.
  • Reheat gently with a splash of milk or chicken broth to restore the creamy consistency.
