Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups diced Roma tomatoes
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh basil
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • Salt, to taste
  • Black pepper, to taste
  • 8 ounces fresh mozzarella, sliced
  • 2 tablespoons grated Parmesan cheese (optional)
  • Balsamic glaze, for drizzling
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
  2. Season the chicken breasts with the Italian seasoning, garlic powder, salt, and black pepper, then arrange them in the prepared baking dish.
  3. In a bowl, combine the diced tomatoes, minced garlic, chopped basil, olive oil, balsamic vinegar, salt, and black pepper.
  4. Spoon the bruschetta mixture evenly over each chicken breast.
  5. Top with slices of fresh mozzarella and sprinkle with Parmesan cheese if using.
  6. Bake for 25 to 30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and lightly golden.
  7. Let the chicken rest for 5 minutes.
  8. Drizzle with balsamic glaze, garnish with fresh basil leaves, and serve immediately.
