Brûléed cheese-stuffed figs combine juicy fresh figs with tangy goat cheese and a thin, crackly caramelized sugar crust. These elegant bites come together in about 15 minutes and work beautifully as an appetizer, cheese-board addition, or simple dessert.

Ingredients

  • Fresh ripe figs
  • Soft goat cheese
  • Granulated or turbinado sugar
  • Honey, optional
  • Fresh thyme, optional
  • Flaky sea salt, optional

Instructions

  1. Gently rinse the fresh figs and pat them completely dry.
  2. Slice off a small portion of each stem, then cut an X into the top of each fig without cutting all the way through the bottom.
  3. Carefully open each fig and spoon or pipe a small amount of soft goat cheese into the center.
  4. Arrange the stuffed figs on a heat-safe baking sheet or dish.
  5. Sprinkle a thin, even layer of granulated or turbinado sugar over the exposed cheese and tops of the figs.
  6. Use a kitchen torch to caramelize the sugar until melted, bubbling, and deep golden brown. Alternatively, place the figs briefly under a very hot broiler and watch them closely.
  7. Let the caramelized sugar stand for about 1 minute so it hardens into a crisp shell.
  8. Finish with optional honey, fresh thyme, or flaky sea salt and serve immediately.

Notes

  • Choose ripe figs that feel soft but still hold their shape. Avoid extremely soft or split fruit because it can be difficult to stuff.
  • Black Mission, Brown Turkey, and other fresh fig varieties work well.
  • Mascarpone, ricotta, or cream cheese can replace goat cheese for a milder flavor.
  • For a savory variation, use blue cheese and add toasted walnuts or pecans.
  • Chopped pistachios can be sprinkled over the figs after brûléeing for additional crunch.
  • Honey or maple syrup can be drizzled over the finished figs for extra sweetness.
  • Fresh thyme or finely chopped rosemary makes a flavorful herbal garnish.
  • The figs can be stuffed and refrigerated for up to 1 day, but add and caramelize the sugar immediately before serving.
  • Serve immediately after brûléeing for the crispest caramel topping, as refrigeration will gradually soften the sugar crust.
  • Microwave reheating is not recommended because it will soften the brûléed topping.
