This homemade brown sugar syrup is rich, smooth, and easy to make with just a few simple ingredients. Its deep caramel-like flavor is perfect for coffee, tea, cocktails, pancakes, oatmeal, and desserts.

Ingredients

  • 1 cup packed brown sugar (light or dark)
  • 1 cup water
  • 1 teaspoon vanilla extract (optional)
  • 1 cinnamon stick (optional)

Instructions

  1. Combine the brown sugar and water in a small saucepan.
  2. Heat over medium heat, stirring frequently until the sugar dissolves completely.
  3. Simmer gently for 2–3 minutes without allowing the mixture to boil vigorously.
  4. Remove from the heat. Stir in the vanilla extract, if using. If using a cinnamon stick, let it steep in the syrup for about 10 minutes, then remove it.
  5. Allow the syrup to cool completely.
  6. Transfer the cooled syrup to a clean glass jar or bottle and refrigerate until ready to use.

Notes

  • Use dark brown sugar for a richer molasses flavor or light brown sugar for a milder sweetness.
  • Add a pinch of pumpkin pie spice or a small piece of fresh ginger for seasonal flavor variations.
  • If the syrup thickens after refrigeration, let it sit at room temperature or warm it gently before using.
  • Store in an airtight glass jar or bottle in the refrigerator for up to 1 month.
  • Always use a clean spoon when serving to help maintain freshness.
  • Discard the syrup if it develops mold, cloudiness, or an off smell.
