Brown Sugar Simple Syrup is a rich, caramel-like sweetener you can make in 10 minutes with just two ingredients. It dissolves instantly into hot and cold drinks, so it is perfect for iced coffee, lattes, cocktails, tea, and lemonade. You can also drizzle it over pancakes, oatmeal, and fruit.

Ingredients

  • 1 cup (200 g) packed light or dark brown sugar
  • 1 cup (240 ml) water
  • 1/2 teaspoon vanilla extract (optional)
  • Pinch of salt (optional)

Instructions

  1. Combine the brown sugar and water in a small saucepan over medium heat.
  2. Stir until the sugar has completely dissolved, about 3 to 5 minutes.
  3. Bring the mixture to a gentle simmer, then reduce the heat to low and cook for 3 to 5 minutes without boiling hard. This lightly thickens the syrup.
  4. Remove from the heat and stir in the vanilla extract and salt, if using.
  5. Let the syrup cool completely. It will thicken a little more as it cools.
  6. Pour into a clean glass jar or bottle, cover, and store in the refrigerator.

Notes

  • Light or dark brown sugar: Light brown sugar gives a mild caramel flavor. Dark brown sugar gives a deeper molasses flavor.
  • Don’t boil hard: A rolling boil can make the syrup too thick or cause it to crystallize.
  • Storage: Keep in an airtight container in the refrigerator for up to 1 month.
  • Thicker syrup: Use a 2:1 ratio of brown sugar to water for a richer syrup that lasts longer.
  • Ways to use it: Sweeten iced coffee, lattes, chai, and cold brew, or use it in an old fashioned and other cocktails. It also works well over pancakes, waffles, oatmeal, and baked fruit.
  • Flavor ideas: Simmer with a cinnamon stick, a few slices of fresh ginger, or a strip of orange peel, then strain before storing.
