Ingredients
1 cup salted butter
1 cup brown sugar
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon kosher salt
1 1/2 cups chocolate chunks or chocolate chips
1 cup fresh or frozen raspberries
Flaky sea salt, for finishing (optional)
Instructions
Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
Brown the butter over medium heat until golden and fragrant with a nutty aroma. Let it cool slightly.
Whisk the browned butter with the brown sugar and granulated sugar until smooth.
Beat in the eggs one at a time, then stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, and kosher salt.
Gradually mix the dry ingredients into the wet ingredients until just combined.
Gently fold in the chocolate chunks and raspberries, taking care not to overmix.
Scoop the dough into evenly sized balls and place them on the prepared baking sheets.
Bake for 10 to 12 minutes, or until the edges are lightly golden and the centers remain soft.
Cool on the baking sheet for several minutes before transferring to a wire rack. Sprinkle with flaky sea salt while still warm, if desired.
Notes
Frozen raspberries work well and help maintain their shape during mixing.
Chill the dough for several hours or overnight for thicker, more flavorful cookies.
Store in an airtight container at room temperature for up to 4 days.
Freeze baked cookies or unbaked dough for up to 2 months.
Warm cookies in the microwave for 10 to 15 seconds before serving.
