baguette or crusty bread, sliced
ricotta cheese
oyster mushrooms, torn into pieces
ramps (bulbs and greens), chopped
butter
olive oil
garlic, minced
salt
black pepper
lemon zest (optional)
fresh herbs such as thyme or parsley (optional)
Instructions
Preheat the oven to 190°C (375°F).
Arrange bread slices on a baking sheet and brush lightly with olive oil.
Toast for 8–10 minutes until golden and crisp.
In a skillet, melt butter over medium heat and cook until golden brown and nutty.
Add oyster mushrooms and cook until tender and lightly browned.
Stir in chopped ramps and minced garlic, cooking until softened and fragrant.
Season with salt and black pepper to taste.
Remove from heat and add lemon zest and herbs if using.
Spread ricotta on each toasted crostini.
Spoon the warm mushroom and ramp mixture over the ricotta.
Serve immediately.

Substitute oyster mushrooms with cremini or shiitake if needed.
Use green onions and garlic in place of ramps if unavailable.
