Ingredients

  • 4 cups broccoli florets, fresh or frozen
  • 1 can cream of mushroom soup
  • 1/2 cup sour cream
  • 2 cups shredded sharp cheddar cheese, divided
  • 1/4 cup grated Parmesan cheese
  • 4 oz cream cheese, softened
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 2 tbsp butter, melted
  • 1 cup crushed buttery crackers or breadcrumbs
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Steam or blanch the broccoli for 3–4 minutes until just tender, then drain thoroughly.
  3. In a large bowl, combine the cream of mushroom soup, sour cream, cream cheese, garlic powder, onion powder, salt, black pepper, paprika, half of the cheddar cheese, and the Parmesan cheese until smooth.
  4. Fold the broccoli into the cheese mixture until evenly coated.
  5. Transfer the mixture to the prepared baking dish and spread into an even layer.
  6. Sprinkle the remaining cheddar cheese over the top.
  7. Mix the crushed crackers or breadcrumbs with the melted butter and sprinkle evenly over the casserole.
  8. Bake for 30–35 minutes, or until hot and bubbly and the topping is golden brown.
  9. Let the casserole rest for 5–10 minutes before serving.
  10. Garnish with fresh parsley if desired.

Notes

  • Thaw and drain frozen broccoli well before using to avoid excess moisture.
  • Add cooked chicken, ham, turkey, or bacon to turn this into a complete meal.
  • Substitute Monterey Jack, Gruyère, Swiss, or Colby Jack cheese for a different flavor.
  • Assemble up to 24 hours ahead and refrigerate until ready to bake.
  • Store leftovers in the refrigerator for up to 4 days or freeze for up to 3 months.
