These Brie Cheese Bites with Cranberry combine flaky pastry, creamy melted Brie, and sweet-tart cranberry sauce in an easy, elegant appetizer. They are perfect for Thanksgiving, Christmas, New Year’s celebrations, and holiday parties.

Ingredients

  • 8 ounces Brie cheese
  • 3/4 cup cranberry sauce
  • 1 sheet puff pastry or 1 package refrigerated crescent dough
  • 1/3 cup chopped pecans or walnuts, optional
  • 1 tablespoon chopped fresh rosemary or thyme
  • 2 tablespoons honey or maple syrup, optional
  • 1 teaspoon orange zest, optional
  • All-purpose flour, for rolling the pastry

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a mini muffin pan.
  2. Place the pastry on a lightly floured surface and gently roll it out if necessary. Cut it into 24 small squares large enough to fit into the mini muffin cups.
  3. Gently press one pastry square into each muffin cup to create a small shell for the filling.
  4. Cut the Brie into 24 small pieces. Leave the rind on or remove it according to preference.
  5. Place one piece of Brie into each pastry cup and spoon a small amount of cranberry sauce over the cheese. Avoid overfilling the cups.
  6. If using nuts, sprinkle a small amount of chopped pecans or walnuts over each bite.
  7. Bake for 12 to 15 minutes, until the pastry is puffed and golden and the Brie is soft and melted.
  8. Let the bites cool in the pan for about 5 minutes before carefully transferring them to a serving platter.
  9. Finish with fresh rosemary or thyme. If desired, drizzle with honey or maple syrup and garnish with orange zest before serving warm.

Notes

  • The Brie rind is edible and can be left on, but it may be removed for a smoother, creamier filling.
  • Use a thick cranberry sauce rather than a runny sauce to help keep the filling inside the pastry cups.
  • For cranberry pecan Brie bites, sprinkle finely chopped pecans over the cranberry sauce before baking.
  • For extra sweetness, drizzle the baked bites with honey or maple syrup or add a small amount of brown sugar before baking.
  • Add orange zest for a bright cranberry-orange variation.
  • Cranberry sauce can be replaced with raspberry preserves, fig jam, apricot preserves, or cherry preserves.
  • The bites can be assembled several hours ahead, covered, refrigerated, and baked shortly before serving.
  • Store cooled leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in a 350°F (175°C) oven for 5 to 8 minutes to help restore the crisp texture of the pastry.
