Ingredients

  • 1 large flour tortilla
  • 2 eggs
  • 1/2 cup shredded cheese
  • 1/4 cup cooked bacon or sausage
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup bell peppers, diced
  • 1 teaspoon olive oil or melted butter
  • Pinch of salt
  • Pinch of black pepper

Instructions

  1. Preheat the oven to 400°F (200°C) or heat a skillet over medium heat.
  2. Place the tortilla on a baking sheet or in the skillet and lightly brush with olive oil or melted butter.
