Bounty Dates are a delicious homemade treat inspired by the classic Bounty candy bar. These bite-sized snacks combine sweet dates filled with creamy coconut and coated in rich chocolate for a satisfying and healthier indulgence.

Ingredients

  1. 12 Medjool dates, pitted
    1/2 cup shredded unsweetened coconut
    2 tablespoons coconut cream or cream cheese
    1 teaspoon vanilla extract
    1 cup dark chocolate chips or chopped chocolate
    1 teaspoon coconut oil

Instructions

In a bowl, mix shredded coconut, coconut cream, and vanilla extract until combined.

  1. Carefully stuff each pitted date with the coconut mixture.
  2. Place stuffed dates on a parchment-lined tray and freeze for 15-20 minutes to firm up.
  3. In a microwave-safe bowl, melt dark chocolate chips with coconut oil in 30-second intervals, stirring until smooth.
  4. Dip each stuffed date into the melted chocolate, coating completely. Return to parchment paper.
  5. Refrigerate until chocolate is set, about 30 minutes.

Notes

  1. Use milk or white chocolate instead of dark chocolate.
  2. Add chopped nuts inside dates for extra crunch.
  3. Sprinkle sea salt or crushed pistachios on top before chocolate sets.
  4. Use almond butter instead of coconut cream for a different filling.
  5. Drizzle extra melted chocolate over the finished dates for decoration.
