These blueberry oat crumble bars feature a buttery oat crust, a sweet and tangy blueberry filling, and a golden crumb topping. Perfect as a snack, dessert, or breakfast-style treat.

Ingredients

  • 1 ½ cups rolled oats
  • 1 cup all-purpose flour
  • ¾ cup brown sugar
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup butter, melted
  • 2 cups blueberries (fresh or frozen)
  • ¼ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 180°C (350°F) and line a baking pan with parchment paper.
  2. In a bowl, mix oats, flour, brown sugar, baking soda, and salt.
  3. Pour in melted butter and stir until crumbly.
  4. Press two-thirds of the mixture into the pan to form the crust.
  5. In another bowl, combine blueberries, granulated sugar, cornstarch, lemon juice, and vanilla extract.
  6. Spread the blueberry mixture evenly over the crust.
  7. Sprinkle the remaining oat mixture over the top.
  8. Bake for 30–35 minutes until golden and bubbly.
  9. Allow to cool completely before slicing into bars.

Notes

  • Use frozen blueberries without thawing for best results.
  • Let bars cool fully to set properly before cutting.
  • Add nuts or cinnamon for extra flavor and texture.
  • Store at room temperature for 2 days or refrigerate up to 5 days.
  • Freeze for up to 2 months and thaw before serving.
