Ingredients

  • Fresh or frozen blueberries
  • Whipped topping, thawed
  • Instant vanilla pudding mix
  • Crushed pineapple, well-drained
  • Mini marshmallows
  • Plain Greek yogurt or sour cream (optional)
  • Sweetened shredded coconut (optional)
  • Chopped pecans or walnuts (optional)
  • Vanilla extract (optional)

Instructions

  1. If using frozen blueberries, thaw and drain them well.
  2. In a large mixing bowl, combine the whipped topping and vanilla pudding mix until smooth.
  3. Fold in the Greek yogurt or sour cream if using.
  4. Add the blueberries, well-drained crushed pineapple, and mini marshmallows.
  5. Stir in the shredded coconut and chopped nuts if desired.
  6. Gently fold everything together until evenly coated.
  7. Cover and refrigerate for at least 2 hours to allow the flavors to blend and the marshmallows to soften.
  8. Stir gently before serving and garnish with additional fresh blueberries if desired.
