Blueberry Brie grilled cheese combines crisp, buttery bread with creamy melted Brie and juicy sweet-tart blueberries. This quick sweet and savory sandwich makes a delicious lunch, brunch, or easy meal.

Ingredients

  • Sourdough bread or sturdy sandwich bread
  • Brie cheese, sliced
  • Fresh blueberries
  • Unsalted or salted butter, softened
  • Honey, optional
  • Balsamic glaze, optional
  • Fresh thyme leaves, optional
  • Pinch of salt, optional
  • Freshly ground black pepper, optional

Instructions

  1. Gently crush some of the blueberries with a fork, leaving several berries whole for a combination of jammy and juicy textures.
  2. Lay the bread slices on a clean work surface and spread the outside of each slice with softened butter.
  3. Arrange an even layer of sliced Brie on the unbuttered side of one bread slice.
  4. Spoon the blueberries over the Brie without adding excess liquid. Drizzle with a small amount of honey, if desired.
  5. Add fresh thyme, black pepper, a pinch of salt, or a small drizzle of balsamic glaze, if desired.
  6. Place another layer of Brie over the blueberries to help hold the fruit inside the sandwich as the cheese melts.
  7. Top with the second bread slice, keeping the buttered side facing outward.
  8. Heat a skillet over medium-low heat and carefully place the assembled sandwich in the pan.
  9. Cook for 3–5 minutes on the first side, or until the bread is crisp and golden brown.
  10. Carefully flip and cook for another 3–5 minutes, keeping the heat moderate so the Brie melts before the bread becomes too dark.
  11. Transfer the sandwich to a cutting board once the bread is golden and the Brie is melted. Rest for 1 minute before slicing and serving.

Notes

  • Fresh blueberries work best because they contain less excess moisture. If using frozen blueberries, thaw and drain them thoroughly first.
  • The Brie rind is edible and can be left on, but it can be removed for an especially smooth filling.
  • Blueberry preserves can replace some or all of the fresh blueberries for a sweeter, more intensely fruity sandwich.
  • Prosciutto or cooked bacon can be added for a salty, savory variation.
  • Camembert can replace Brie, or Brie can be combined with sharp white cheddar for a stronger cheese flavor.
  • Thinly sliced apple or pear and chopped walnuts or pecans make delicious additions.
  • Cook over medium-low heat so the Brie has time to melt without burning the bread.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in a skillet over low heat or in a 350°F (175°C) oven for 8–10 minutes.
