Blue Cheese and Rosemary Scalloped Potatoes are a rich and elegant side dish featuring tender potato layers baked in a creamy blue cheese sauce with fragrant rosemary. Finished with a golden, bubbly topping, this comforting casserole is perfect for holidays, dinner parties, or family meals.

Ingredients

  • Yukon Gold or Russet potatoes, thinly sliced
  • Unsalted butter
  • Yellow onion, finely diced
  • Garlic, minced
  • Heavy cream
  • Whole milk
  • Blue cheese, crumbled
  • Gruyère or sharp cheddar cheese, shredded
  • Fresh rosemary, finely chopped
  • Fresh thyme (optional)
  • All-purpose flour
  • Salt
  • Black pepper
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish with butter.
  2. Melt the butter in a saucepan over medium heat. Add the onion and cook for about 5 minutes until softened.
  3. Stir in the garlic and cook for 30 seconds until fragrant.
  4. Sprinkle in the flour and cook for 1 minute, stirring constantly.
  5. Gradually whisk in the milk and heavy cream until smooth.
  6. Add the rosemary, thyme if using, black pepper, and a small amount of salt. Simmer until the sauce begins to thicken.
  7. Remove from the heat and stir in the blue cheese until mostly melted.
  8. Arrange one-third of the sliced potatoes in the prepared baking dish.
  9. Spoon one-third of the cream sauce over the potatoes and sprinkle with some of the Gruyère or cheddar.
  10. Repeat the layers, finishing with the shredded cheese on top.
  11. Cover with foil and bake for 45 minutes.
  12. Remove the foil and bake for another 25–30 minutes until the potatoes are tender and the top is golden brown.
  13. Let the casserole rest for 10–15 minutes before serving.
  14. Garnish with fresh parsley and extra rosemary if desired.

Notes

  • Yukon Gold and Russet potatoes both work well for this recipe.
  • Assemble the casserole up to 24 hours ahead and refrigerate before baking.
  • Add cooked bacon or sautéed mushrooms for extra flavor.
  • Broil for 2–3 minutes at the end for an extra crispy topping.
  • Store leftovers in the refrigerator for up to 4 days or freeze for up to 2 months.
