Blackberry Fool is a classic British no-bake dessert that combines sweet-tart blackberry purée with lightly sweetened whipped cream for a silky, airy treat. It’s simple to prepare, beautifully elegant, and perfect for warm-weather entertaining or an easy dessert anytime.

Ingredients

  • Fresh or frozen blackberries
  • Granulated sugar
  • Lemon juice
  • Heavy whipping cream
  • Powdered sugar
  • Vanilla extract
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Place the blackberries, granulated sugar, and lemon juice in a saucepan over medium heat.
  2. Cook for 5–8 minutes, stirring occasionally, until the berries soften and release their juices.
  3. Gently mash the berries with a spoon or potato masher.
  4. For a smoother texture, strain the berry mixture through a fine-mesh sieve to remove the seeds. Let the purée cool completely.
  5. In a large mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  6. Gently fold about two-thirds of the cooled blackberry purée into the whipped cream, leaving streaks for a marbled effect.
  7. Spoon the mixture into serving glasses or bowls.
  8. Top with the remaining blackberry purée.
  9. Chill for at least 30 minutes before serving.
  10. Garnish with fresh blackberries and mint leaves if desired.

Notes

  • Frozen blackberries work well; thaw first or cook directly from frozen.
  • Straining the purée is optional but creates a smoother dessert.
  • For a lighter version, replace half of the whipped cream with Greek yogurt.
  • Serve with shortbread cookies, biscotti, or sponge cake.
  • Store covered in the refrigerator for up to 2 days.
  • Freezing is not recommended because the whipped cream may separate after thawing.
