Ingredients

  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons instant yeast
  • 1 cup warm milk
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 cup black sesame paste
  • 1/3 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 2 tablespoons unsalted butter, softened (for filling)
  • Pinch of salt
  • 1 1/2 cups powdered sugar
  • 2 teaspoons matcha powder
  • 2 to 3 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

  1. Mix the flour, sugar, yeast, salt, warm milk, egg, and butter until a smooth, elastic dough forms.
  2. Cover and let the dough rise until doubled in size, about 1 hour.
  3. Combine the black sesame paste, softened butter, brown sugar, cinnamon, and salt until smooth.
  4. Roll the dough into a large rectangle and spread the filling evenly over the surface.
  5. Roll the dough tightly into a log and slice into 12 equal rolls.
  6. Arrange the rolls in a greased baking dish, cover, and let rise until puffy, about 30 minutes.
  7. Bake at 350°F (175°C) for about 25 minutes, or until golden brown and cooked through.
  8. Whisk together the powdered sugar, matcha powder, milk, and vanilla extract until smooth.
  9. Allow the rolls to cool slightly, then drizzle generously with the matcha glaze before serving.

Notes

  • Add toasted black sesame seeds to the filling for extra crunch.
  • Mix cream cheese into the glaze for a richer topping.
  • Chopped walnuts or pecans make a delicious addition to the filling.
  • Prepare the rolls the night before and refrigerate before the second rise for easy morning baking.
  • Store leftovers in an airtight container for up to 2 days at room temperature or 5 days in the refrigerator. Freeze for up to 2 months.
