Ingredients

  • All-purpose flour
  • Baking powder
  • Salt
  • Unsalted butter, softened
  • Granulated sugar
  • Large eggs
  • Vanilla extract
  • Whole milk
  • Sour cream
  • Unsalted butter, softened (for buttercream)
  • Powdered sugar
  • Vanilla extract (for buttercream)
  • Heavy cream or milk
  • Pinch of salt
  • Rainbow sprinkles
  • Colored sprinkles or confetti sprinkles
  • Fresh berries (optional)
  • Birthday candles

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and line two 8-inch or 9-inch round cake pans with parchment paper.
  2. Whisk together the flour, baking powder, and salt in a medium bowl.
  3. Cream the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then mix in the vanilla extract.
  5. Alternate adding the dry ingredients and the whole milk, mixing gently after each addition.
  6. Fold in the sour cream until the batter is smooth.
  7. Divide the batter evenly between the prepared pans and smooth the tops.
  8. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool the cakes in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  10. Prepare the buttercream by beating the butter until creamy, then gradually mixing in the powdered sugar, vanilla extract, salt, and enough heavy cream or milk to achieve a smooth, spreadable consistency.
  11. Spread frosting between the cake layers, then frost the top and sides of the cake.
  12. Decorate with sprinkles, fresh berries if desired, and birthday candles before serving.

Notes

  • Add rainbow sprinkles to the batter for a funfetti-style cake.
  • Fill the cake with strawberry jam, raspberry preserves, or chocolate ganache for extra flavor.
  • Use chocolate buttercream instead of vanilla frosting for a richer dessert.
  • Add fresh fruit between the layers for a lighter variation.
  • Flavor the cake with almond or lemon extract for a unique twist.
  • Store the frosted cake covered at room temperature for up to 2 days or refrigerate for up to 5 days.
  • Freeze unfrosted cake layers or individual slices for up to 3 months.
  • Allow refrigerated slices to come to room temperature before serving for the best texture.
