Ingredients

  • 1 pound ground beef
  • 1/2 cup onion, finely chopped
  • 1 teaspoon garlic powder
  • Salt, to taste
  • Black pepper, to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped pickles
  • 12 egg roll wrappers
  • Vegetable oil for frying
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon mustard
  • 1 tablespoon pickle relish
  • 1 teaspoon vinegar
  • 1/2 teaspoon paprika

Instructions

  1. In a skillet over medium heat, cook the ground beef and onions until browned. Drain excess grease.
  2. Season the beef mixture with garlic powder, salt, and black pepper.
  3. In a small bowl, mix together mayonnaise, ketchup, mustard, pickle relish, vinegar, and paprika to make the special sauce.
  4. Lay an egg roll wrapper on a clean surface in a diamond shape.
  5. Add a spoonful of beef mixture, shredded cheese, chopped pickles, and a small drizzle of special sauce near the center.
  6. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the edge with a little water.
  7. Heat vegetable oil in a deep skillet or pot to 350°F.
  8. Fry the egg rolls in batches for 3 to 4 minutes until golden brown and crispy.
  9. Transfer to a paper towel-lined plate to drain excess oil.
  10. Serve warm with additional special sauce for dipping.

Notes

  • For a lighter option, bake or air fry the egg rolls until crispy and golden.
  • Add cooked bacon or jalapeños for extra flavor variations.
  • Roll the egg rolls tightly and seal well with water to prevent opening while frying.
  • Store leftovers in the refrigerator for up to 3 days and reheat in the oven or air fryer.
  • Egg rolls can be frozen before or after frying for up to 2 months.
