Berry Sauce

Homemade Berry Sauce is a vibrant, fruity topping made with fresh or frozen berries, sugar, and bright lemon juice. It is delicious over pancakes, waffles, cheesecake, ice cream, yogurt, oatmeal, and other desserts.

Ingredients

  • 3 cups fresh or frozen mixed berries
  • 1/3 cup granulated sugar
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest, optional
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water

Instructions

  1. Add the berries, sugar, and lemon juice to a medium saucepan. Frozen berries can be added directly from the freezer without thawing.
  2. Cook over medium heat for 5–7 minutes, stirring occasionally, until the berries soften and release their juices.
  3. Gently mash some of the berries with the back of a spoon or a potato masher, leaving some whole for a chunky texture.
  4. In a small bowl, whisk the cornstarch and cold water together until completely smooth.
  5. Slowly stir the cornstarch slurry into the simmering berries. Cook for another 1–2 minutes, stirring frequently, until the sauce thickens.
  6. Remove from the heat and stir in the vanilla extract and lemon zest, if using.
  7. Let the sauce cool for several minutes before serving. The sauce will continue to thicken as it cools.

Notes

  • Fresh or frozen strawberries, blueberries, raspberries, blackberries, or any combination can be used.
  • Frozen berries may require a few additional minutes of cooking time.
  • For a completely smooth sauce, blend after cooling slightly and strain through a fine-mesh sieve if desired.
  • For a thinner sauce, reduce or omit the cornstarch and simmer until the liquid reaches the desired consistency.
  • Honey or maple syrup can replace some or all of the granulated sugar, with the amount adjusted to taste.
  • Serve cold, at room temperature, or gently warmed over pancakes, waffles, cheesecake, ice cream, yogurt, oatmeal, crepes, or pound cake.
  • Store cooled sauce in an airtight container in the refrigerator for up to 5 days.
  • Freeze in a freezer-safe container for up to 3 months, leaving room for expansion. Thaw overnight in the refrigerator.
