Berries & Cream Mini Trifles are elegant individual desserts made with layers of soft cake, fresh mixed berries, and fluffy whipped cream. These light, refreshing treats are perfect for parties, holidays, and summer gatherings.

Ingredients

  • 4 cups pound cake, angel food cake, or sponge cake, cut into cubes
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1 cup fresh blackberries
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 4 oz cream cheese, softened (optional)
  • 1 teaspoon lemon zest (optional)
  • Fresh mint leaves, for garnish
  • Whole berries, for garnish
  • Additional whipped cream, for garnish

Instructions

  1. In a large mixing bowl, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form.
  2. If using cream cheese, beat it until smooth and gently fold it into the whipped cream.
  3. Wash, dry, and prepare all of the berries.
  4. Place a layer of cake cubes into the bottom of each mini trifle glass or dessert cup.
  5. Spoon a layer of whipped cream over the cake.
  6. Add a layer of mixed berries.
  7. Repeat the layers until the glasses are nearly full, finishing with whipped cream on top.
  8. Garnish with whole berries, fresh mint leaves, and lemon zest if desired.
  9. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.

  • Use lemon pound cake for a bright citrus variation.
  • Add vanilla pudding or pastry cream for a richer dessert.
  • Drizzle berry sauce between the layers for extra fruit flavor.
  • Substitute almond extract for vanilla in the whipped cream.
