Ingredients

  • 4 medium roasted beets, peeled and sliced
  • 5 oz baby arugula
  • 1/2 cup goat cheese or feta cheese, crumbled
  • 1/2 cup walnuts or pecans, toasted
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions
