These beefy Greek pita folds are packed with seasoned ground beef, fresh vegetables, and a creamy yogurt sauce wrapped in soft pita bread. A quick and flavorful Mediterranean-inspired meal perfect for any day.

Ingredients

  • 1 lb ground beef
  • 4 pita breads
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 teaspoon dried oregano
  • salt
  • black pepper
  • For the filling:
  • 2 tomatoes, diced
  • 1 cucumber, sliced or diced
  • 1/2 red onion, thinly sliced
  • 1 cup lettuce
  • For the sauce:
  • 1 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1 tablespoon dill or parsley
  • salt
  • black pepper

Instructions

  1. Heat olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, then stir in the minced garlic.
  2. Add the ground beef and cook until browned, breaking it apart as it cooks. Season with oregano, salt, and black pepper, and cook until fully done and slightly crispy.
  3. In a bowl, prepare the sauce by mixing Greek yogurt, lemon juice, garlic, dill or parsley, salt, and black pepper until smooth. Set aside.
  4. Warm the pita bread slightly until soft and pliable.
  5. Assemble each pita by adding a portion of cooked beef, followed by tomatoes, cucumber, red onion, and lettuce.
  6. Drizzle the yogurt sauce over the filling.
  7. Fold the pita and serve immediately.
