Ingredients
2 ciabatta or sourdough rolls
1 1/2 cups cooked beef slices (roast beef or steak)
4 tablespoons basil pesto
4 slices mozzarella or provolone cheese
1 medium tomato, sliced
1/2 cup arugula or spinach (optional)
2 tablespoons olive oil or butter
Instructions
Preheat a panini press or skillet over medium heat.
Slice the bread rolls in half horizontally.
Spread pesto evenly on the inside of each half.
Layer beef slices on the bottom halves of the bread.
Add cheese, tomato slices, and greens if using.
Close the sandwiches and brush the outsides with olive oil or butter.
Place in the panini press or skillet and press gently.
Cook for 3–5 minutes until bread is golden and cheese is melted.
Remove, slice in half, and serve warm.
Notes
