Ingredients

For the Tortellini & Beef:

  • 1 package (9-12 oz) beef tortellini
  • 1 lb beef sirloin or tenderloin, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and freshly ground black pepper, to taste

For the Parmesan Cream Sauce:

  • 1 cup heavy cream
  • ½ cup beef broth
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Fresh parsley, chopped (for garnish)
  • Additional grated Parmesan cheese (for serving)

Instructions

Cook the Tortellini

  • Bring a large pot of salted water to a boil.
  • Add the beef tortellini and cook according to package instructions until al dente.
  • Drain and set aside.

2. Sear the Beef

  • Heat olive oil in a large skillet over medium-high heat.
  • Season the beef with salt and black pepper.
  • Add the beef to the skillet and sear for 5-7 minutes, turning to brown all sides.
  • Remove from the skillet and set aside.

3. Make the Parmesan Sauce

  • In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  • Pour in the beef broth, scraping up any browned bits from the pan.
  • Lower the heat to medium and stir in heavy cream. Bring to a gentle simmer.
  • Add Parmesan cheese and Italian seasoning, stirring continuously until smooth and creamy.

4. Combine & Serve

  • Return the cooked beef and tortellini to the skillet.
  • Toss gently to coat everything in the sauce.
  • Adjust seasoning with salt and black pepper as needed.
  • Serve hot, garnished with chopped parsley and extra Parmesan cheese.

Notes

  • Use cheese or spinach tortellini if you can’t find beef tortellini.
  • Lighter Version: Substitute half-and-half or whole milk for heavy cream.
  • Spicy Kick: Add a pinch of red pepper flakes for extra heat.
  • Vegetable Boost: Stir in sautéed spinach, mushrooms, or sun-dried tomatoes.
  • Make-Ahead Tip: Cook the beef and tortellini separately, then reheat with the sauce before serving.
