Beef and Ramen Noodles is a quick and satisfying one-pan meal featuring savory ground beef, tender ramen noodles, crisp vegetables, and a flavorful Asian-inspired sauce. Ready in just 30 minutes, it’s perfect for busy weeknights or easy meal prep.

Ingredients

  • Instant ramen noodles (discard the seasoning packets)
  • Ground beef
  • Olive oil
  • Yellow onion, diced
  • Garlic, minced
  • Fresh ginger, grated
  • Broccoli florets
  • Carrots, julienned or shredded
  • Soy sauce
  • Beef broth
  • Hoisin sauce
  • Sesame oil
  • Brown sugar or honey
  • Cornstarch
  • Water
  • Black pepper
  • Crushed red pepper flakes (optional)
  • Green onions, sliced
  • Sesame seeds, for garnish

Instructions

  1. Cook the ramen noodles according to the package directions, reducing the cooking time by about 1 minute so they remain slightly firm. Drain and set aside.
  2. Heat the olive oil in a large skillet or wok over medium-high heat.
  3. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease if necessary.
  4. Add the diced onion and cook for 3–4 minutes until softened.
  5. Stir in the garlic and grated ginger and cook for about 30 seconds until fragrant.
  6. Add the broccoli and carrots and cook for 3–5 minutes until just tender.
  7. In a small bowl, whisk together the soy sauce, beef broth, hoisin sauce, sesame oil, brown sugar or honey, and black pepper.
  8. Pour the sauce into the skillet and bring it to a gentle simmer.
  9. Whisk the cornstarch with the water to make a slurry, then stir it into the sauce. Cook for 1–2 minutes until slightly thickened.
  10. Add the cooked ramen noodles and toss until evenly coated with the sauce.
  11. Garnish with green onions, sesame seeds, and crushed red pepper flakes if desired. Serve immediately.

Notes

  • Discard the ramen seasoning packets and use the homemade sauce for the best flavor.
  • Cook the noodles slightly under al dente to prevent them from becoming mushy.
  • Substitute ground chicken, sliced steak, or tofu if desired.
  • Add vegetables such as mushrooms, snap peas, cabbage, spinach, or bok choy for extra nutrition.
  • Store leftovers in the refrigerator for up to 4 days.
  • Freeze for up to 2 months, though the noodles may soften after reheating.
