Beef and Bean Burritos are a hearty and flavorful Mexican-inspired dish, featuring seasoned ground beef, refried beans, and a variety of optional toppings all wrapped in a soft flour tortilla. This easy-to-make meal is perfect for lunch, dinner, or meal prep and can be customized to suit your preferences.

Ingredients

  1. 1 lb ground beef
    1 can (15 oz) refried beans (or 2 cups homemade refried beans)
    1 tablespoon olive oil
    1 small onion, chopped
    2 garlic cloves, minced
    1 packet taco seasoning (or homemade seasoning)
    1/2 cup water (for the taco seasoning)
    6 large flour tortillas (1012 inches)
    1 cup shredded cheese (cheddar, Monterey Jack, or a Mexican blend)
    1/2 cup sour cream (optional, for serving)
    Salsa, guacamole, or jalapeños (optional, for toppings)
    Fresh cilantro, chopped (optional, for garnish)

Instructions

Cook the beef: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant. Add the ground beef to the skillet, breaking it up with a spoon as it cooks. Cook until browned and cooked through, about 7-8 minutes. Drain any excess fat.

  1. Season the beef: Add the taco seasoning to the beef mixture along with 1/2 cup of water. Stir well to combine and cook for another 2-3 minutes until the mixture thickens and becomes fragrant. Remove from heat.
  2. Prepare the tortillas: While the beef is cooking, warm the tortillas in the microwave for 10-20 seconds to make them more pliable. Alternatively, you can warm them in a dry skillet for about 10 seconds on each side.
  3. Assemble the burritos: Spread a spoonful of refried beans down the center of each tortilla. Top with a generous amount of the seasoned beef mixture. Add a sprinkle of shredded cheese. Optionally, add some salsa, sour cream, or any other toppings you like.
  4. Roll up the burritos: Fold in the sides of the tortilla and then roll it up tightly, starting from the bottom. Make sure to tuck the sides in as you roll to keep everything inside.
  5. Serve: Slice the burritos in half (optional), and garnish with chopped cilantro or any additional toppings you desire. Serve with extra salsa, guacamole, or sour cream on the side.

  1. For a vegetarian version, replace the ground beef with sautéed vegetables or beans for a hearty filling.
