A hearty one-pot hamburger soup with seasoned ground beef, tender potatoes, vegetables, tomatoes, and smoky barbecue sauce. It combines savory, slightly sweet, and smoky flavors in a comforting meal perfect for busy weeknights.

Ingredients

  • 1 lb ground beef
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 1 cup corn
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 4 cups beef broth
  • 3/4 cup barbecue sauce, plus more to taste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper, plus more to taste
  • 1 tablespoon olive oil, if needed
  • Chopped fresh parsley, optional

Instructions

  1. Heat a large soup pot or Dutch oven over medium-high heat. Add the ground beef and cook until browned, breaking it into small pieces as it cooks. Use olive oil if needed to prevent sticking.
  2. Drain excess grease if necessary. Add the onion, carrots, and celery and cook for several minutes until the vegetables begin to soften.
  3. Add the minced garlic and cook for about 30 seconds, stirring, until fragrant.
  4. Add the potatoes, corn, diced tomatoes, tomato sauce, beef broth, barbecue sauce, and Worcestershire sauce.
  5. Season with smoked paprika, chili powder, garlic powder, salt, and black pepper. Stir until well combined.
  6. Bring the soup to a gentle boil, then reduce the heat and partially cover the pot.
  7. Simmer for 20–25 minutes, stirring occasionally, until the potatoes and carrots are fork-tender.
  8. Taste and adjust the salt, pepper, and other seasonings as needed. Stir in additional barbecue sauce for a stronger barbecue flavor.
  9. Ladle the soup into bowls and garnish with optional fresh parsley. Serve hot.

Notes

  • Add drained kidney beans, black beans, or pinto beans for a heartier soup and additional servings.
  • For extra heat, add diced jalapeño, cayenne pepper, hot sauce, additional chili powder, or use spicy barbecue sauce.
  • Green beans, bell peppers, peas, zucchini, or chopped cabbage can be added for extra vegetables.
  • Ground turkey or ground chicken can replace the beef for a lighter variation. Add extra smoked paprika or Worcestershire sauce if desired for a stronger savory flavor.
  • For a cheesy variation, top each serving with shredded cheddar and sliced green onions.
  • To thicken the soup, simmer it uncovered for a little longer or mash a few cooked potato pieces directly in the pot.
  • Store cooled leftovers in an airtight container in the refrigerator for 3–4 days. Reheat gently on the stovetop or in the microwave, adding a splash of broth or water if needed.
  • The soup can be frozen in freezer-safe containers. Thaw in the refrigerator before reheating, noting that the potatoes may become slightly softer after freezing.
