Ingredients

  • 2 racks pork ribs
  • 2 tbsp olive oil
  • 1/4 cup brown sugar
  • 2 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp black pepper
  • 1 1/2 tsp salt
  • 1 tbsp chili powder
  • 1/2 tsp cayenne pepper
  • 1 tsp dried oregano
  • 1 tbsp mustard (optional)
  • 1 tsp liquid smoke (optional)
  • 1 tbsp honey drizzle (optional)
  • 2 tbsp chopped parsley (optional)
  • Extra cayenne pepper for heat (optional)

Instructions

  1. Preheat the oven, grill, or smoker to 300°F.
  2. Remove the membrane from the back of the ribs if needed.
  3. Pat the ribs dry with paper towels.
  4. Rub the ribs lightly with olive oil.
  5. In a bowl, combine the brown sugar, smoked paprika, garlic powder, onion powder, black pepper, salt, chili powder, cayenne pepper, and oregano.
  6. Coat the ribs generously with the dry rub mixture on all sides.
  7. Wrap the ribs in foil if baking or place directly on the grill or smoker.
  8. Cook low and slow for 2 1/2 to 3 hours until tender.
  9. For extra crispy edges, uncover or place over higher heat during the final few minutes of cooking.
  10. Let the ribs rest for several minutes before slicing.
  11. Serve warm with optional garnishes like parsley or a drizzle of honey.

  • Baby back ribs and spare ribs both work well for this recipe.
  • Removing the membrane helps improve tenderness.
