This BBQ Breakfast Scrambler is a hearty one-pan meal loaded with fluffy scrambled eggs, smoky barbecue flavor, crispy potatoes, and savory meat. Perfect for breakfast, brunch, or breakfast-for-dinner, it’s filling, flavorful, and easy to customize.

Ingredients

  • 6 eggs
  • 3 cups cooked breakfast potatoes or hash browns
  • 1 cup cooked bacon, sausage, or shredded barbecue chicken
  • 1/4 cup barbecue sauce
  • 1 cup shredded cheddar cheese
  • 1/2 onion, diced
  • 1 bell pepper, diced
  • 1 tbsp butter or oil
  • 2 tbsp milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 green onions, sliced for garnish
  • Optional toppings: avocado, sour cream, hot sauce, extra barbecue sauce

Instructions

  1. Heat a large skillet over medium heat and add the butter or oil.
  2. Add the onions and bell peppers to the skillet and cook until softened.
  3. Stir in the cooked potatoes and cook until lightly crispy and heated through.
  4. Add the cooked bacon, sausage, or shredded barbecue chicken and drizzle with barbecue sauce. Stir to combine.
  5. In a bowl, whisk together the eggs, milk, salt, and black pepper.
  6. Pour the egg mixture into the skillet and cook gently, stirring occasionally, until the eggs are softly scrambled and fully cooked.
  7. Sprinkle shredded cheddar cheese over the top and allow it to melt.
  8. Remove from heat and garnish with green onions and any desired toppings.
  9. Serve warm immediately.
