Ingredients

  • 6 eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil or butter
  • 2 cups diced potatoes
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1 1/2 cups cooked barbecue meat such as pulled pork, brisket, or chicken
  • 1/4 cup barbecue sauce
  • 1 cup shredded cheddar cheese
  • 2 tablespoons sliced green onions
  • Hot sauce for topping (optional)
  • Avocado slices for topping (optional)
  • Sour cream for topping (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil or butter in a large skillet over medium heat.
  2. Add the diced potatoes and cook for 10 to 12 minutes, stirring occasionally, until golden and tender.
  3. Stir in the onion and bell pepper and cook until softened, about 3 to 4 minutes.
  4. Add the cooked barbecue meat and barbecue sauce, stirring until heated through.
  5. In a bowl, whisk together the eggs, milk, salt, and black pepper.
  6. Pour the egg mixture into the skillet and gently stir as the eggs begin to cook.
  7. Continue cooking until the eggs are soft and fully set.
  8. Sprinkle shredded cheddar cheese over the scramble and allow it to melt.
