Ingredients

  • 1/2 cup small tapioca pearls
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Ground cinnamon or nutmeg for topping

Instructions

  1. Place the tapioca pearls in a bowl with water and soak for 30 minutes if required by the package instructions.
  2. Preheat the oven to 350°F (175°C).
  3. In a saucepan over medium heat, combine the milk, heavy cream, sugar, and salt.
  4. Stir until the sugar dissolves and the mixture is warm but not boiling.
  5. Add the tapioca pearls and cook for about 10 minutes, stirring occasionally, until slightly softened.
  6. In a separate bowl, whisk the eggs.
  7. Slowly add a small amount of the warm milk mixture into the eggs while whisking continuously to temper them.
  8. Gradually whisk the egg mixture back into the saucepan.
  9. Stir in the vanilla extract.
  10. Pour the mixture into a greased baking dish or ramekins.
  11. Sprinkle lightly with cinnamon or nutmeg.
  12. Bake for 30 to 35 minutes, or until the custard is set and lightly golden on top.
  13. Allow the pudding to cool slightly before serving.
